Few things are more cheering than hearing corn pop in the kitchen, right?!

This recipe is full of flavour and very comforting – the perfect alternative to store bought popcorn filled with nasties that leave you feeling very thirsty and bloated (at least they do that to me!).

These are made with natural ingredients and are easy to digest. I love to make them before I go to the cinema and take them with me in a tupperware in my bag! Also great for a movie night in or as a snack if you’re having friends over. You will all love them!

Serves 2-3 people

80 grammes corn kernel
2 tbsp coconut oil
4 tsp raw coconut sugar
1 tsp good quality salt (I use Himalayan pink salt)
3 tsp onion powder
4 tsp water
2-3 tbsp nutritional yeast

Melt the coconut oil on low to medium heat in a big saucepan. When melted, throw in the corn, stir to ensure all corn is coated in oil and cover with a lid.
The corn will start to pop very soon. Let it pop for a few minutes but keep an eye on it to avoid it from burning. When there’s a three second gap between one pop and the next you know the popcorn is ready. Turn off the heat and uncover.

Meanwhile throw the coconut sugar, onion powder, salt and water in a small saucepan on low heat stirring continuously as the mixture starts to bubble up. Keep stirring for a minute or until all ingredients are combined and the consistency is a little thicker. Turn the heat off and pour the mixture evenly onto the popcorn (still in the big saucepan). Mix in well with your hands or a big spoon.

When all the popcorn is evenly coated, sprinkle in the nutritional yeast and mix again. Serve in a big bowl and enjoy!

*Do your best to buy non GMO /organic popcorn whenever possible!
